Anyone with recommendations on the number of hinges I should use for the doors?  I am thinking 3 hinges on each door.

I'd go with 3 hinges.  I understand that the real deciding factor is the weight of the door.  Hollow core (interior) doors are often hung with 2 hinges while solid core (exterior) doors are hung with 3.  I'm guessing that the weight of your doors will be somewhere in between these and I think it's better to be safe than sorry.

If it means anything to you, Crich has 3 hinges on it's door.
