why doesn't the Guide mention them? - Oh, it's not very accurate.

Looks like one bottle says "Aldebaran" - probably not the same "Aldebaran whiskey" as Star Trek because that stuff is green.
If I strain my eyes, I think it looks like a circle split horizontally - the top half possibly representing the actual Orange Giant star, and the lower half a star-field. There's a silhouette of a bull because the star in in Taurus. 

The decanter the 1st Doctor uses looks like a very fancy cut-glass one, with a traditional chain and label which says "Brandy".

I'd be interested to see a better view of that Aldebaran label - I've talked myself into wanting to make it. I've recently been looking back at all the Star Trek bottle labels I re-created (because photobucket dropped it's free hosting, and I was going through my album there). Recently I was even able to update/correct my Romulan Ale label thanks to a re-appearance on Star Trek Picard. - It occurs to me I'm possibly (one of) the only people who wants Deep Space Nine to get a HD release so I can look at the bottles in Quark's Bar, rather than the spaceships!

It depends on how long the Doctor has owned it surely. It started off green, but as the colours settle it could very well turn brown. =P

or after drinking half he could of added long island ice tea ingredients to fill the bottle (masking the green) just needs a splash of soda.

Under that, in the circle, I'm pretty sure it says 32ND C____________.

The word beginning with C looks too long and not shaped right to be Century... could be something like Centennial or Celebrations...

Cultivating molds, spores, and fungi on board the TARDIS?

I'd then expect that, by the twenty-third century, those will work just great with the U.S.S. Discovery's ( highly improbable ) "Spore Drive". Not to mention their becoming the primary dietary staple for giant space-faring tardigrades!

... hmm... and after considering that... then it's no wonder that the Discovery always spins as it jumps.

As to the content, I'd pretty much swear it was Limoncello... Lethal stuff, right up there with Romulan Ale, for that hideous morning after feeling  ;D  ;D

Well, I said I'd have a go at it! So, with thanks to @warmcanofcoke for the excellent find of the label, here's what I got so far:

The hardest (and by far the longest) part has been matching the font! Compared to that, playing with gradients is easy - even tracing that bull will be a breeze compared to the tedium of eye-balling font after font only to rule them out because the numbers, E or R don't match.

(This is bringing back memories of squinting at poor source images from Deep Space Nine!)

It's a bottle label from one of my favourite sci-fi series... it's kind of my thing  ;D Which reminds me: I really should find a new place to upload all my DS9 ones, since photobucket stopped being free.

Flickr or Imgur come to mind for photo hosting options.  Flickr might be the more desirable option as you can curate the selection, and disable the ability to download the images if you wished.
