There are some excellent plans on here and a very detailed history of the Tom Yardley Jones boxes on here by Tony Farrell, so if you use the search you'll find everything thing you need (I've just done it and there still there) just search Tony Farrell and scroll down a bit and it's all there and it's a fascinating read.
As for where to start, when I did mine I started with the base first but if you look elsewhere on the site you'll see everyone's builds so that should give you a good few pointers. There's tons of great info in this place.

When I go through the build, I think I might try and make a step-by-step procedures document for future builders, because that's what I really need myself: an idiot's guide to building a TARDIS.

It would need to be like IKEA furniture: telling me what parts I need, how many of each, what paint etc. I'm an idiot. lol

I think on YouTube there's a "wood working for mere mortals" Tardis building tutorial.
I seem to remember that's one of the easiest ones to follow for a beginner....

TBF, once I can figure out what cuts of wood I need and how many of each, it probably won't be too tragic save for the lighting and f/x. I just need to get that bit done first. I can be a bit of a doofus, so I'd rather have everything in front of me in one go before starting so I can figure out what goes where and do problem solving as needed... I'm a natural born worrier, so doing things on the fly sets me on edge!

I won't go into the details of how I structured my build because I definitely would do some things differently today, but I'll mention the planning.  As I said, I simplified the 1963 design.  So I drew a scale...we'll call it a blueprint...drawing on graph paper.  Then I made a "cut list" of everything I'd need: 
5 sheets of thin plywood,
X number of 1x4s,
X number of 1x3s,
4 10' 4x4s,
...
A sheet of "crackle" fluorescent diffuser (for the "windows")
A "jelly jar" lamp glass (the $3.95 one Lowe's sells is WAAAAY too small for the signal lamp, as I would learn)
A gallon of blue paint,
Box of screws, hinges,
etc. 

I still got a lot of stuff wrong and had to go back for things I'd forgotten or underestimated, but it gave me a good start.

Yeah, that's effectively what I need to do. I just find it very intimidating because I am not technically minded, and I am a little neuro-diverse, as we now say, so I find things like this really unsettling if it's not effectively all planned out for me! Which I know sucks because I always feel like I am trying to copy someone else's work; I'm not, I just get unnerved by anything outside my typical comfort zone and it literally makes my mind freeze up with anxiety.

How thick is the glass meant to be? How did people make the signs? How do the signs light up from inside? How do you make it light up when the door opens? How do you make the TARDIS make a dematerialisation noise? And so on until I end up so frustrated and anxious that it puts me off ever wanting to do anything!!

Well you're in the right place.  Poke around build threads and you'll find the different ways people solved those things.  Most of the wood is nominal 1" thick on most builds.  The base, corner posts, and roof can be 2" (1.5" actual thickness).  The plywood can be 1/4" and works just fine.  If you're a caveman like me (or just want to do it the way the London police did with the actual boxes, you just hang a lightbulb inside.  Mine has a sensor so it comes on when the sun goes down.  Lights the top signs, the door sign, and the windows (all of which are open in the back).  It even lights the signal lamp on mine right now. 

For more sophisticated lighting (and dematerialization noises) have a look at some of the other builds by the more technical people.
